So grateful for my beautiful foodie friend Barbara, who came to visit me bearing homemade treats. I never knew these existed! Same chewy crunch, only with pure and natural ingredients for a happy belly and happy body!

Holy schmoley did I ever love Rice Krispie Treats throughout my childhood! The flavor of this version is sweet for sure but a bit different than the original … and y’know what? I noticed when I tried these for the first time, it was actually the chewy crunch that I’ve been so enamored with all of these years. Who knew! What a delicious discovery!

Here’s how you make ’em:

Brown Rice Krispy Squares

  • 1 1/2 cups brown rice syrup or coconut syrup
  • 2/3 cup cashew butter or almond butter
  • 2 tbsp coconut oil
  • 1 tbsp pure vanilla extract
  • 9 cups crispy brown rice cereal
  • 1 cup hemp hearts (optional, great for protein)
  • parchment paper

In a saucepan on medium heat, stir syrup until it begins to bubble.

Remove from heat and add cashew butter, coconut oil and vanilla extract, stirring until the mixture becomes glossy and stretchy.

Using a stiff silicone spatula or wooden spoon, gently stir in crispy brown rice cereal until coated.

Pat into a baking pan lined with parchment paper, spreading evenly. Cover with more parchment paper and chill in refrigerator.
