CBLT Sandwich

My boyfriend calls this a CBLT, as in, Col’s Bacun Lettuce and Tomato sandwich.

(Whenever I’m makin’ a new thing, if y’don’t keep an eye on him, he’ll put “Col” in the name. I think that’s so funny.)

It’s endearing that he does this so I’m keepin’ this name, for the “aaaaw!” factor alone. It makes me smile.

And smiling is good.

People who don’t have a Col can think of CBLT as Coconut Bacun, Lettuce and Tomato. So it works either way!

Yaay.

CBLT Sandwich Recipe

(Amounts listed are per sandwich)

  • 2 slices spelt or brown rice bread
  • 1 Romaine lettuce leaf, ripped into bread-sized pieces
  • 1/2 tomato, sliced
  • 1 tbsp coconut or avocado oil mayo
  • 4 tbsp (1/4 cup) Coconut Bacun Bits (the ones y’just made 😉)

Spread mayo on bottom slice of bread then spoon coconut bacun bits on top. (Normally I don’t care how you assemble your sandwich 😉 but in this case, the mayo will help your bacun bits to not fall off!) Add lettuce and tomato, then top with your second slice of bread and enjoy!
