"I Can't Have Bread" Bread

“i can’t have bread” bread

No white flour, no white sugar … gluten-free (but of course!) … This is the bread for people who “can’t have bread.”

I avoided bread for yeeeeears for health reasons. So I lost the 30 extra pounds I’d mysteriously begun carrying ’round and banished that food coma I used to always have.

(You know the one, when ya eat lunch, then feel droopy and sluggish afterwards and suddenly the couch starts yelling your name? Yeah, THAT.)

For these reasons, living a bread-free existence is SUPER AWESOME! For sure, one million and one percent.

But every now and again, I do love a nice slice or two. And this bread will make you smile without bringin’ ya down. Cool!

“I Can’t Have Bread” Bread Recipe

Preheat oven to 350.

In large bowl, beat eggs til frothy, about 5 min. Add xylitol and apple cider vinegar, stirring well.

In separate bowl, combine remaining dry ingredients. Then stir dry ingredients into wet until blended. Add water a little bit at a time until doughey aka “not dry.”

Pour into loaf pan (greased well with coconut oil or lined with parchment paper.)

Bake 25 – 35 min, til wooden skewer inserted into center comes out clean.

I have to say it again, I just love whenever I see “Barbara the cooking hero has commented on your post.” It just makes me smile so big. Let me know how you like it. It may not be as fluffy as your bread but I am in love with it!
