If you can stand for your hands to be a lil’ messy for a bit, it will all be worth it in the end … you’re gonna just LOVE this one! Me-oh-my, is it every delish! (There I go, channeling somebody’s grandma again!)

I tried numerous times to get these to look non-messy for you guys but finally gave up and just made it a part of the name. So there!

It would be super-fantastic if you had a mandoline or a squatty peeler right about now … (if y’want, you can get all fancy pants on me ‘n call it a Julienne Peeler.) This makes it super easy to make the cucumber behave and do what you want it to do.

If not, no worries … a regular peeler or a sharp knife will do, just make your best attempt at thin, smooth, even strips.

These taste, oh, about a *million* times better than they look! The ultimate in healthy, indulgent YUM.

Messy Cucumber Avocado Rolls

  • 3 avocados
  • 3 garlic cloves, minced
  • 3 tsp lime juice
  • 3/4 tsp salt
  • 1 English cucumber
  • 1-2 tbsp capers (not to go all anal on ya but I used 45 capers 🙂 )

Mash together all ingredients except cucumber and capers, until smooth. Thinly slice cucumber lengthwise on a mandoline or with a vegetable peeler. Lay cucumber strips on a paper towel lined cutting board to absorb excess moisture for a moment. Discard  paper towel. Spread avocado mixture along cucumber strip all the way to the end. (You’ll need this to help the end stick and seal up the roll.) Line up about 5 capers along the center of each strip. Roll up each strip, making sure the ends stick.

You’ll want to eat these tasty little guys soon after you make ‘em. Enjoy!
