Best Oatmeal Ever (for a week)

Cuz sometimes … y’just gotta make a whole big bunch and sure you could multiply another recipe but maybe you’re not always up for all’a that math! (Am I right? 😉)

Aside: I sometimes wonder if I’ll ever be able to make this without needing to constantly come to My Own Website to look at My Own Friggin’ Recipe! (How silly, right? Do you do that too, or can you just make stuff?)

I will be eternally grateful to Cooking Hero Barbara for my little Aroma rice cooker… small and manageable… which I can plop stuff into and totally leave it there in the corner doin’ it’s thang, take a little nap, then come back to a nice batch of oatmeal that’ll last me the rest of the week.

What would I do without this thing?

My heart is filled with gratitude each time that I use it. Which adds to how good the food is, doncha think? 💗

Best Oatmeal Ever (for a week) Recipe

  • 2 cups old fashioned oats
  • 1 1/2 cup coconut cream or milk*
  • 2 cups water
  • 2 tbsp raw honey
  • 1 – 2 tsp cinnamon
  • 1 tsp pure vanilla extract (try 1 1/2)
  • 1/4 tsp salt
  • Optional, for topping: Dried mango, raw cashews

Rice cooker method …

Place all ingredients into rice cooker, stirring well. Cook on white rice setting. Once rice cooker goes off, serve warm and enjoy!

Stovetop method …

Bring water to a boil in medium pot. Reduce heat to medium low. Add all other ingredients, stirring well. Cook 10 to 20 min depending on the consistency you like. Serve warm and enjoy!

*About the coconut milk:

For this we’ll need pure coconut milk or cream, nothing added. Arroy makes a coconut cream that is like a thick, creamy liquid. Their coconut milk will also work.

(A few Nots: Let’s Do Organic, on the other hand, makes a creamed coconut that is full of pulp and comes in solid form. That is not the one that we need. We need the thick, creamy liquid version. Another “not” is the kind of coconut milk that’s a beverage. Too runny and usually has extra stuffs in it. We don’t need no extra stuffs. 😉)
