I never met me a daikon I didn’t like.
Ok, I’m lying, I really don’t think I’ve actually ever met a daikon before. Not a one. This was my first encounter.
So this was a great surprise … something that felt a hair decadent (Healthy pancakes? Really?) with brand new flavors. Pretty colors too! Make sure not to cook the celery too long to keep it nice ‘n fresh green.
When you’re eating healthier, it’s important to mix it up and try things with a variety of flavors and textures, to keep your taste buds engaged ‘n interested.

Brown Rice Pancakes with Braised Daikon & Celery Recipe
Pancakes
- 2 egg whites
- 1 big pinch of salt
- 1/2 cup brown rice flour
- 1/4 cup water
- 1 tsp extra virgin coconut oil
Beat egg whites til frothy then add salt, brown rice flour and water, mixing lightly just until there are no lumps. Drop into large frying pan coated with coconut oil on medium high heat til no longer wet inside.
Braised Daikon & Celery
- 1 small daikon radish, about 6″ or so, sliced
- 1 bunch celery, sliced thin
- 1 tbsp extra virgin coconut oil
- 2 big pinches of salt
Melt coconut oil in large frying pan over medium high heat. Add daikon, celery and salt, cooking til ever so slightly soft and still firm. Top pancake with braised daikon & celery and enjoy!
