Oh yes, I did!

Y’all know how much emphasis I put on achieving the right texture on your tongue.

(By the way, being from New York, that may very well be my first “y’all” in the history of time!)

Y’alls aside, it’s beyond words. When something’s all soft and chewy, ooey gooey, thick and creamy, there’s no doubt, the yum factor just skyrockets.

PS My boyfriend wants me to make it again already (five minutes later.)

Which is always a good sign.

So anyway, I asked my Facebook friends which pic they liked best and the verdict was pretty clear:

13 votes for A and 43 votes for B! Landslide, right?

Here’s the thing:

The A people were more vocal and I totally understand their comments that the flowers pull focus from the chocolatey oozey goodness. I wondered that myself.

Next up: Finding a way to prettify a photo without drawing attention away from the key player, the food!

Chocolate Nip Schmookie D’oh Nice Cream Monday (ha!) Recipe

For the chocolate nip schmookie d’oh

  • 2 tbsp cashew butter
  • 2 tsp coconut oil
  • 2 tsp raw honey
  • 1/8 tsp pure vanilla
  • 1/8 tsp kosher salt
  • 1/2 tsp cacao nibs (sweet or regular, depending on your preference*)

For the nice cream

  • 1 1/2 bananas, sliced and frozen
  • 1 tbsp cocoa powder, unsweetened
  • 1/4 tsp pure vanilla extract

For the topping

  • 1 heaping tbsp sunflower seed butter, lightly sweetened
  • 1 tsp cacao nibs (sweet or regular, depending on your preference*)
  • cashews (optional)

First, make the chocolate nip schmookie d’oh …

In small bowl, mix together first 5 ingredients til smooth then stir in cacao nibs, distributing evenly. Press into round pop-out ice cube tray. If you don’t have an ice cube tray, you can put mixture into fridge to firm up just a bit then form into small balls with your hands instead. Freeze til firm, overnight or a few hours.

Then, the nice cream … 

Blend bananas, cocoa powder and vanilla in food processor til smooth like soft serve ice cream, stopping to scrape down sides with spatula once or twice and move it to middle when needed.

And for our grand finale …

Add schmookie d’oh balls to nice cream and serve in bowl, topped with sunflower seed butter and cacao nibs. Enjoy so much, shouting “yaaay! yaaay!” whenever y’want to. 😊

* Regular cacao nibs on their own can be a bit bitter. But with a teaspoonful here and there mixed into other ingredients, I personally don’t notice any bitter at all … I just get the chippy crunch, which is divine! If you want a hint more traditional candyish flavor, my dear friends at Navitas Organics make some fantastic cacao sweet nibs that will work just great.
