Chris Columbus Spiced Carrot Soup

Ok you guys, so I accidentally made really delicious soup. I know, I know, “Who on earth accidentally makes delicious soup?” Apparently, me.

I feel like Christopher Columbus!

It all started when I had the bright idea to make my dad’s daily fresh pressed juice A. without a juicer and B. without an awareness of the magical qualities of the infamous Vitamix.

Oh my!

See, I’m used to a Ninja.

You put stuff in there and you blend, blend, blend then your father tells you he doesn’t like how texturey it is so y’blend, blend, blend some more.

Now doesn’t it seem, theoretically, if you blend even more, it will be even better? Oh no, not so. Come to find out, in Vitamix-land, if you blend even more, it’s not even better, if you blend even more, it’s soup.

Hot soup.

Well ok, you miracle of modern science, defying every law of nature, I guess this is a thing. And I guess we’d better put some garlic in there to soupen you up.

Chris Columbus Spiced Carrot Soup

  • 1/4 cup coconut water
  • 6 small carrots
  • 1 stalk celery
  • 1 huuuge garlic clove
  • 1/2 inch ginger root, peeled (to taste)
  • 1 dash cinnamon
  • 1 dash salt, to taste

Put everything into your Vitamix (or other high speed blender). Start out on the low setting then switch to high right away. Blend til smooth and hot, about 3 min. If you don’t have a blender, put it all into a big pot on low heat, cover and steam til carrots are tender. Puree with immersion blender or mash with potato masher. Enjoy!
