Once again … I’m in love with a food!
My first experiment with this was in a CBLT sandwich for my boyfriend. Guys, I’m tellin’ ya … I wanted seconds and thirds …
Which is a very good sign, doncha think?
PS He looooooooved it. Crunchy and flavorful, totally satisfying. Felt like comfort food. *HE* wanted seconds and thirds too!
So the only drawback is … People are gonna gobble up your sandwich! Make more than one.

This recipe makes enough bacun bitz for three CBLT sandwiches or salads. To tell you the truth, I wished I’d made double, to put on other stuffs.

Bonus: I’m happy to say, no piggies were harmed during the making of this dish. 😉

Coconut Bacun Bitz Recipe
- 1 cup coconut flakes
- 1 tbsp extra virgin olive oil
- 1 tbsp pure maple syrup*
- 1 tbsp liquid aminos
- 1 tbsp nutritional yeast
- 1 1/4 tsp granulated garlic (or 1 tsp garlic powder)
- 12 drops liquid smoke
- 1/8 tsp (1 dash) paprika**
Preheat oven to 325 and line cookie sheet with parchment paper. Set aside coconut flakes and whisk together all other ingredients. Toss in coconut flakes and gently stir til coated. Spread in thin later on parchment paper.
Bake 3 min then remove pan to stir coconut bacun. Return to oven and bake again, til slightly crispy and light golden brown, about another 2 to 6 min, watching carefully. Remove immediately as it’s easy to burn. (Mine took 6 min altogether.)
Allow bacun bitz to cool a few min and they’ll crisp up even more. Enjoy on salads or sandwiches or just on their own!

* Omit the maple syrup if you’re avoiding sugar.
** Omit the paprika if you don’t do nightshades.
It’s great with these ingredients but truly anything with liquid smoke is gonna taste pretty amazing anyway. So you do you, boo! 😊
