Honey Mango Oatmeal

Isn’t star anise so pretty?

Confession: When I used it purely for decoration this time, after I finished eating I washed it and dried it and kept it for later.

Is that bad?

I mean come on, could you really toss this cute little thing into the garbage can after breakfast?

I didn’t think so.

Oh and PS: I always need to add this special note cuz it makes a huge difference …

Ideally you’ll want to get pure, thick coconut milk or cream, the kind that’s used in cooking, usually found in the Asian section of your local supermarket … as opposed to those “coconut milks” with lots of ingredients that are more of a (runny) beverage, usually found in the cereal aisle.

What we’re lookin’ for can usually be found in the Asian section of your local food store. Arroy makes a coconut milk that’s like a thick cream. This is perfect!

Honey Mango Oatmeal Recipe

  • 1 cup old fashioned rolled oats
  • 1/2 cup pure coconut milk*
  • 1 cup water
  • 1/2 fresh mango, pureed or 1 package Amara Tropical Mango Organic Baby Food or 1/2 cup (4 oz) mango baby food
  • 1 tsp raw honey
  • 1 pinch cinnamon
  • 1 pinch salt
  • (optional, for garnish) star anise

Rice cooker method …

Place all ingredients except star anise into rice cooker, stirring well. Cook on white rice setting. Serve, sprinkling with a tiny pinch of salt on top (and star anise, if you’d like.) Enjoy!

Stovetop method …

Bring water to a boil in medium pot. Reduce heat to medium low. Add all ingredients except star anise, stirring well. Cook 10 to 20 min depending on the consistency you like. Serve, sprinkling with a tiny pinch of salt on top (and star anise, if you’d like.) Enjoy!
