Snow … or no snow?

Not that it matters at this point cuz they’re both in muh bella but y’ know … for the future. 😉

The snow version’s real easy, just coconut flakes whipped up in a little bullet blender for a few secs.

Ups the cuteness factor I think but for taste I’d go snowless. Then the cocoa stands out.

Lil Baby Cocoa Balls Recipe

  • 1 cup old fashioned oatmeal
  • 1 cup whole raw cashews (or a bit less if chopped)
  • 6 tbsp pure cocoa powder
  • 7 pitted dates
  • 2 or 3 tbsp water
  • 1 tsp coconut oil
  • 1/2 tsp pure vanilla extract
  • 1 – 2 pinches (1/16 – 1/8 tsp) kosher salt

Optional

  • 1 – 2 tbsp coconut flakes (for “snowy” top)
  • 1 – 2 tbsp cacao nibs (for crunchy center)

In food processor on high speed, blend first 8 ingredients til finely crumbled and well combined.

Make balls from 1 teaspoon of dough at a time.

Tip: I fill a tablespoon with a teaspoonish amount of dough then press firmly against the walls of the spoon. Remove dough and roll into a ball. Dough needs to be packed tight to stick together and this helps achieve that density.

If you’d like a little crunchy center, when dough is in the spoon, make sure there’s that little well in the middle and drop in 5 or so cacao nibs before rolling up your ball. (If you drop in more, dough won’t stick together.)

Grind up coconut flakes quickly in bullet blender til fine and sprinkle on top, if desired.
