All of your cells will feel happy with this in your belly. Big-time YUM! Special thanks to everyone who helped me discover this very special thing.

So often when we eat healthier it tastes good yet we suspect, somewhere in the recesses of our minds, that we’re missing out on something that all of the other everybodys out there most CERTAINLY must be having. “But what about me?”

Well, this is not one’a those times. When Barbara (who, by the way, is my cooking hero) shared Ina’s original version of this recipe with me, I couldn’t help but exclaim, “Yaaay! I do not feel deprived!”

Adapting a bit, as I’m known to do, I made my own little tweaks and now here we are! And a very nice place it is!

Luscious Roasted Squash Salad

(4 servings)

  • 1 butternut squash, peeled and diced
  • Extra virgin olive oil (2 tbsp now & 1/4 cup later)
  • 1 tbsp pure maple syrup
  • Kosher salt (1 tsp now & 1 tsp later)
  • Freshly ground black pepper (1/2 tsp now & 1/2 tsp later)
  • 3 tablespoons raisins
  • 3/4 cup apple cider
  • 2 tbsp apple cider vinegar (Bragg Organic Raw is ideal!)
  • 2 tbsp shallots, minced
  • 2 tsp dijon mustard
  • 7 oz baby arugula
  • 1/2 cup walnuts halves

Preheat oven to 400 F.

On a baking sheet, toss butternut squash with 2 tbsp olive oil, maple syrup, salt and pepper. Roast until tender, approx 15 minutes, turning midway through. Add raisins and walnuts and cook a few minutes more.

In a small saucepan, bring apple cider, apple cider vinegar and shallots to a boil over medium-high heat. Cook 6 min then remove from heat and whisk in mustard, 1/4 cup olive oil, 1 tsp salt, and 1/2 tsp pepper.

In a large salad bowl, toss arugula with roasted squash and a few spoonfuls of the warm dressing. Add dressing a little at a time to your taste preference.

Enjoy this warm and flavorful delight!

Col…where have I been…never saw this fabulous creation of your’s…LOVE your food site! FABULOUS ..oh, I said that! And I didn’t even know this salad was in your okay to eat list! It is a GREAT salad…think I will make it again! You can also add cranberries, or blueberries to add a little sweetness.

You go girl! So inspiring!

Oh yum, I love that about the berries … a little pop o’ sweet here ‘n there is magic! This is one’a my all time favorite dishes … the “I’m not deprived!” thing truly blows my mind, my precious friend!
