I just love having friends write down their favorite healthy recipe for me cuz then when I make it myself next time, I feel close to them. And seeing their writing in my recipe box makes my heart smile.
This is a great dish to keep on hand for a snack or to add to meals as a tangy, refreshing little complement.
My friend Lori taught me to make it, ‘cept she used a covered bowl instead of a mason jar. Do it whatever way feels good to you!

Marinated Cucumbers a la Lori Recipe
- 2 cucumbers, sliced thin
- 1/2 cup apple cider vinegar
- 2 tbsp raw honey
- 1 -2 tbsp scallions or leeks, diced
- 3 sprigs fresh dill, chopped
Combine all ingredients except cucumber in mason jar, stirring well. Add cucumbers then lay jar on its side and set in the fridge a few hours, rotating jar periodically to coat all of the cucumbers. Enjoy!
