This super simple dish has tons of flavor and it made me so happy! I always rate my recipes on a 1 to 10 scale ‘n rarely give out the 10s but this was an exception. I wanted it twice in one week, yes I did!

If you reheat this, warm it in a pan and stir in a splash more olive oil to keep our garbanzo friends from drying out.

Peppered Garbanzos and Squash

  • 1 medium yellow squash, diced
  • 1 medium zucchini, diced
  • 2 tbsp extra virgin olive oil
  • 1 can (15 oz) garbanzo beans, drained
  • 1 tsp onion powder
  • 2 big pinches ground black pepper
  • Kosher salt, to taste
  • 1 squeeze fresh lemon juice

In medium saucepan on medium, sauté squash and zucchini in olive oil til soft and golden. Mix in garbanzo beans, onion powder, pepper and salt and heat til warm. Stir in a squeeze of lemon juice and enjoy!
