Welp, momma is up to her old tricks again, makin’ stuff up for me to try.

I got these freeze dried cherries but didn’t know quite what to do with ’em. They were more tart than I expected, which is actually really nice with this salad, for a little pop.

The dressing is rich and silky plus the two forms of onion add a kick. Enjoy!

Red Leaf Salad with Buttery Pecan Dressing Recipe

Dressing

Salad

  • 1 1/2 cups red leaf lettuce, torn
  • 2 tbsp green scallions, minced
  • 1/4 medium red onion, chopped
  • dried cherries (about a dozen)
  • pecans (about half a dozen)

If coconut oil is not runny, melt it on lowest heat til liquid, stirring in pecan butter to make dressing. Rub dressing on pecans and drizzle over red leaf lettuce. Top with scallions, onion, cherries and pecans. Enjoy!
