Get ready, guys, I’m goin’ through a comfort food phase. So be prepared for some warm, creamy, savory … and of course, healthful and nurturing … eats!
If you follow my eating plan you know that mushrooms are fungi so I don’t have them regularly. But once in a while feels ok. The words Dr. Diamond uses are “in moderation.” That feels good to me.
So grab your big, fluffy blanket, stoke the fire if y’got one (me, I’ve got a little fireplace candle … good enough!) and let the comfort begin!

‘Shrooms Casino Recipe
- 16 oz mushrooms, whole (with stems removed and chopped)
- 2 tsp extra virgin olive oil
- 1 cup raw cashews
- 1/4 cup coconut water
- 1/4 cup nutritional yeast
- 1 – 1 1/2 tsp garlic salt, to taste
- for garnish: pinch tarragon (optional)
