Seaweed Salad

Homemade seaweed salad, inspired by my dear friend Carrie. (Although Dr. Diamond “prescribed” that I have it once a week years ago, I would neeeeever in a million have thought to make this myself … until now!)

Studies studies show that seaweed (in moderation, as with everything) is a potent source of antioxidants, helps prevent inflammation and is a great source of iodine.

Iodine deficiency can manifest in fatigue, depression, higher susceptibility to disease and difficulty losing weight.

Seaweed salad is a “you’re gonna either love it or hate it” sorta scenario so give it a try and see where you land!

Seaweed Salad Recipe

Soak wakame in more than twice as much water til reconstituted, 5 to 20 min. Seaweed will expand like crazy! Drain and squeeze out excess water. Toast sesame seeds in small pan til just beginning to change color then set aside. Mix all other ingredients in a large bowl then add seaweed, stirring til well coated. Serve topped with sesame seeds and enjoy!
